Cure-You-Quick chicken stock. Saute a family
size package of chicken legs in a bit of oil in a large stock pot.
Add some roughly chopped onion. Reduce heat to low and cover to let
sweat for 25-30 minutes. Add salt to taste and 2 bay leaves as well
as water - 4 cups for double strength or 8 cups for full strength
stock. Bring to a simmer. Let simmer without boiling for 30-45
minutes. Remove chicken and let cool until cool enough to handle to
remove the meat from the bones and skin. Strain and de-fat stock.
This freezes very well.
